Mondays, how I loathe you. The only thing I like about them is it’s a reset to your weekend. If you eat out, or have a few cocktails over the weekend (like I did), Monday is here to save you. At least that’s the thought process that get’s me through it.
On a different note, did anyone watch SNL over the weekend and see the “near-life death experience skit”? If you didn’t you need too!
I couldn’t stop laughing at Kate McKinnon, I mean she always makes me laugh until I’m in tears but this was out of this world! This recipe is amazing! If you’re in the mood for a tasty treat, like I always am, this is an easy way to fill your cravings. These balls are gluten, dairy and soy free – plus the essential fats found in coconut oil promotes healthy skin. So it’s crazy not to make these! Let me know what you think!

Coconut Cacao Balls
- 1 cup cacao powder
- 1 cup coconut oil
- ½ cup maple syrup
- ¾ cup coconut meal
- ¾ -1 cup coconut flakes
- Mix the cacao powder, coconut oil, coconut meal, and maple syrup in a bowl with a spoon until well combined.
- Roll the mix into balls
- Roll the balls into coconut flakes
- Let sit in fridge for 10 minutes, until the balls have taken to the shape
