Kale Salad with Apple Cider Vinegar Dressing

It seems kale salads are appearing every where these days. It’s a healthy clean choice – great source of fiber – but if your like me it took you a while to get used to the taste. It’s definitely a tougher texture compared to spinach, which means you shouldn’t treat it the same way.

Here are a few tips to help you enjoy and get the most out of your kale:

  • Thinly Slice the Kale, instead of tearing it. This makes it easier to eat, with less chewing!
  • Use dressing with acidity. Although it’s a tough veggie, using creamy dressing does not help with softening it up. Acid in dressing, helps break down the fibers making it more tender. (Massaging olive oil and salt into the kale works too!)
  • Curly Kale has a gritty texture and a lack of flavor. It’s not the best for salads. Tuscan and lacianto kale are less tough, has great flavor and generally prettier.

This is a lunch time staple for me. It’s easy to make, light and totally delicious. I typically mix the kale with the dressing the night before, to make the kale more tender.  Then in the morning I add my cooked bacon (bacon makes everything better) and other ingredients.

Kale Salad with Apple Cider Vinegar Dressing

These ingredients are totally subjective, you can change any amount to your liking, this is typically just how much I use. Sometimes (most times) I sneak an extra slice of bacon in there…

  • 4-5 kale leafs (de-stemmed and sliced)
  • 2 tbsp. chickpeas
  • 4-5 slices of cooked bacon chopped
  • roasted red pepper chopped
  • 1 tbsp. almond slices
  • 1 tbsp. dried cranberries
  • top with 1/4 sliced avocado


  • 2 tbsp. extra virgin olive oil
  • 2 tbsp. apple cider vinegar
  • 1 tbsp. fresh lemon juice


  1. Mix all salad ingredients in a bowl
  2. In a small separate bowl, mix the olive oil, apple cider vinegar and lemon juice.
  3. Pour mixed dressing over salad.
