Paleo Chocolate Chip Cookies

It took a while but I found the secret to Paleo Chocolate Chip Cookies, what is it you ask? … Coconut Sugar. Coconut Sugar gives these cookies a “brown sugar” taste, and plus its gluten free!

Paleo Chocolate Chip Cookies

Paleo Chocolate Chip Cookies


  • 1 ½ cups almond butter
  • 2 tbsp coconut flour
  • ¼ cup coconut sugar
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1 egg (room temperature)
  • 2 tbsp maple syrup
  • ¼ cup of soft butter (I used Kate’s Homemade Butter)
  • ½ tsp sea salt
  • ¼ cup of Enjoy Life Chocolate Chips (or as many as you want)



  1. Preheat the oven at 350F degrees
  2. In a mixer, mix the coconut sugar, butter, maple syrup, egg and vanilla until creamed.
  3. Mix in the almond flour, coconut flour, salt, and baking powder. Once it’s all mixed, fold in the chocolate chips.
  4. Line a baking sheet with parchment paper. Using a cookie scoop, scoop the dough and place on the parchment. Using a spatula or back of the spoon, flatten the cookies. These cookies don’t flatten while being cooked.
  5. Bake cookies for 9-11 minutes, until the bottom is browned. Let cool on a wire rack for 5 minutes.
