Happy Memorial Day!
How are you celebrating?
We’re celebrating by doing a boat load of yard work. We decided to throw a house warming party, so we are swamped with work on the house to complete.
So, let’s keep this post short and simple, since it’s beautiful out and I have a ton of outside work to do today. For our Memorial Day meal, we are making Jalapeno Burgers, grilled avocado, and a kale watermelon salad. Here’s our delicious recipe!
Paleo Jalapeno Hamburgers and Grilled Avocados
Servings 4-5, Total time 20 minutes
- ½ lbs grounded pork
- ½ lbs grounded beef
- 1 jalapeno, chopped
- ¼ white onion, chopped
- ¼ tsp salt
- ¼ tsp pepper
- ¼ tsp cayenne
- ½ tsp garlic powder
- 2 avocados, halved
- ½ tsp olive oil
- pinch of sea salt
- Heat up your grill
- In a large bowl, mix all the ingredients together. Take a fist full out and make a ball, flatten out to make your patty.
- On a cutting board, halve your avocadoes. Drizzle olive oil and sprinkle salt. Set aside.
- Place your patties on the grill, cook until done.
- When your patties have 2-3 minutes left, place the avocadoes on the frill skin side up. Cook for 2-3 minutes, check occasionally to prevent burning. Serve on the side, or top avocado on the patties.
