Fresh Guacamole & Pico De Gallo

We threw our first summer party at our house and it was amazing! We invited a bunch of our closest friends and family to see our house for the first time since we moved in. That’s why I’ve been doing yard work non stop! Anyways, everyone seemed to have a good time, and the weather was perfect! Lawn games, the grill and summer drinks were in full swing!

Alright, let’s get to the party menu… I feel bad when I subject people to my eating lifestyle, especially if they don’t want it – but I still always try to sneak it in there! One of our best friends has celiac, so I kind of used him as an excuse, sorry man.

Our guests brought a bunch of other dishes, but here is the menu that we made:

Appetizers:

  • Guacamole
  • Pico de Gallo
  • Black Bean Dip (Not Paleo, but totally delicious!)
  • Gluten Free Corn Chips

Main Course:

Since I’m still building my recipe index for my blog, a lot of these recipes will be posted in the upcoming weeks. It seems like we made a lot of food, but it was so worth it and most were made a head of time.

I wanted to share our recipe for guacamole and pico de gallo with you guys on the blog today. I hope you enjoy these tasty apps!

Guacamole

Ingredients:

  • 4 ripe avocados
  • 1 small red onion, chopped
  • 1 roma tomato, chopped
  • 1 jalapeno, chopped
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tbsp siracha
  • 1 tsp fresh cilantro, chopped
  • 1/2 lime, juiced

Directions: Prepare all the ingredients, and mix in a bowl and enjoy with some chips or veggies!

Pico de Gallo

Ingredients:

  • 3 roma tomatoes
  • 1 small red onion
  • 1 clove garlic
  • 1 tsp salt
  • 1 tbsp cilantro
  • 1/2 lime, juiced

Directions: Place all ingredients in a food processor, and pulse until everything is finely chopped and mixed.
