Strawberry Kale Summer Salad

Well we did it! We finally booked our honeymoon, and I’m so freakin excited! We got married last Halloween (10/31), and since time rolled right into the holidays, we figured we would hold off the wedding until early 2016. But something got in the way, like it always does, and we had to push it back even farther. Finally, last night we sat down and booked the tickets for Paris and Barcelona at the end of August. So now all we need to do is find a place to stay… anyone have any recommendations?

Anyways, lets get down to the recipe… Warm weather always has me craving light meals and especially fruit, so I turn to this salad. I made it for my bbq last weekend, and it was eaten up so quickly – plus I don’t think anyone realized it was even kale. I put the dressing on the kale in the morning, and before serving I topped it with the fruit and almonds.

I typically make this salad with kale, because it lasts longer and I can make it ahead of time. However, this salad is also delicious with spinach. If you use spinach, mix all the salad ingredients in a bowl, but don’t put the dressing on it until your ready to serve. Spinach wilts so fast!

Strawberry Kale Summer Salad

Ingredients

Salad Ingredients

  • 4-5 kale leaves, chopped
  • ¼ cup fresh blueberries
  • 4 tbsp almond slices
  • ¼ cup fresh strawberries, sliced

Dressing Ingredients

  • 4 tbsp olive oil
  • 3 tbsp apple cider vinegar
  • ¼ tsp salt

Directions

  1. Mix the dressing ingredients in a small bowl
  2. Place the kale in a large bowl and pour the dressing over it. Massage it into the leaves, and place in the refrigerator for 5 minutes.
  3. Mix the rest of the ingredients into the salad bowl.
