Corn & Avocado Salsa

The day is finally here, Mumford & Sons here we come! Just have to get through a full day at work, then run a few errands and then our friends will be coming for a pre-party at the house. So naturally I’m stressing about the menu. I’m thinking gluten free pizzawill be in order, but I think we also need some snacks… and that’s where this recipe comes into play.

Every time we make this recipe, it gets gobbled up so quickly! I know, I know its not strict paleo, because of the black beans but it is gluten free! And hey, if you want to be strict just don’t add them!

Corn & Avocado Salsa

 

Ingredients

  • 1 1/2 cups of canned corn kernels
  • 1 1/2 cups black beans
  • 1/2 small red onion, diced
  • 1 avocado, chopped
  • 1 small jalapeño, chopped and seeded
  • 1/2 cup cilantro, chopped
  • 2 tbsp olive oil
  • juice of 1 lime
  • 1 tsp salt
  • pinch ground pepper

 

Directions

Mix everything into a large bowl, except for the avocado.Taste and add more salt or pepper as needed. Let it sit in the refrigerator for 1 hour. Before serving add avocado.
