Paleo Tuna Salad

My grandmother used to make tuna sandwiches every day for lunch when I was growing up, and it was delicious. There used to be a whole lot more mayonnaise in there, but clearly after the switch, it had to go. I found a few paleo gluten free mayonnaise brands (Primal Kitchen and Sir Kensington’s), and this recipe got back into our lives. However, now I only put a little in, and fill the rest up with avocado. It’s totally tasty on a bed of lettuce or even a sandwich!

Ingredients

  • (2) 6-oz cans of white meat tuna, drained
  • 1/2 ripened avocado
  • 1 tbsp paleo mayonnaise (I use Primal Kitchen)
  • ¼ cup white onion, chopped
  • ¼ cup granny smith apple, chopped
  • 1 tbsp pepitas
  • 1 tsp paprika
  • ½ tsp black pepper
  • salt to taste
  • optional: ½ tsp siracha

Directions

  1. Prepare all ingredients and mix in a large bowl.
  2. Lay your desired amount on some paleo bread or a bed of lettuce and enjoy!
