Huevos Rancheros, do I really need to say more? Ok, so the regular version is paleo for obvious reasons, but that’s where this recipe comes in. Totally delicious breakfast that you can have not only for breakfast, but for dinner too.
Let’s talk about this sweet potato – chorizo version refried beans. OMG, it’s totally to die for! My husband was literally standing over the skillet eating it before we even put it on the plate. (I had to push him away before he devoured it)
What Huevos Rancheros would be complete without fresh tortillas? Tortillas make a great vessel to serve the eggs and salsa on. You can eat this recipe with a fork and knife or pick up the tortilla and eat it like a taco – whatever tickles your fancy. Here’s an awesome recipe for some homemade paleo tortillas.

Paleo Huevos Rancheros
- In a separate skillet, cook the chorizo on medium-high heat. Once the chorizo is almost fully cooked, remove the meat from the skillet and set aside.
- Heat the coconut oil in a skillet on medium-high heat. Once the oil gets hot, put in the chopped sweet potato and onion. Mix in the cumin, paprika, and salt. Cover the skillet and mix occasionally. When the sweet potatoes are almost soft, mix in the chorizo, and cook until potatoes are fully soft.
- Fry the eggs in a separate pan over medium heat, until they are to your preference.
- Place a tortilla on a plate, and top it with the sweet potato/chorizo hash, pico de gallo and avocado.
