Creamy Avocado Lime Dressing

Although I love my olive oil and apple cider vinegar dressing, I wanted to change it up last week when we made the cobb salad. (The though of a hard boil egg and apple cider vinegar made my stomach turn) We always have avocados lying around the house, so I grabbed one and decided to make a new creamy dressing. The avocado needs to be soft though, the recipe does not work as well if the avocado is hard – you will be adding a lot more liquid to get the right consistency.

This creamy paleo dressing contains all the good green things in life – avocado, lime, and cilantro. You can even throw in a jalapeno to spice it up! It is so simple, and easy – just a few minutes in a blender and it’s ready to top any salad or even a taco!

Creamy Avocado Lime Dressing

  • 1 avocado
  • ¼ cup fresh lime juice
  • ¼ cup chopped cilantro leaves
  • 2 tbs olive oil
  • ½ tsp cumin
  • Salt to taste
  • Optional: ½ jalapeno pepper, seeded

Simply add in all the ingredients to a food processor or blender, and pulse on high until smooth. (Add up to ¼ cup of water to thin if needed) Store in refrigerator until ready to serve.
