Paleo Sweet Potato Chips

Ugh, totally dragging today! We had a pretty exciting weekend surprising one of our best friends for his birthday in NYC. We ate and drank our way around the city and it was amazing – only thing I would’ve changed was the weather. The real feel in NYC on Saturday was 115 degrees F – like really mother nature?! Anyway, we ate at this awesome restaurant in the West Village called Empellon Taqueria. They have gluten free, and paleo-ish dishes which were so great! Plus, most of their plates are small, so your encouraged to order a few and share!

Keeping the recipe post simple today with some paleo sweet potato chips. When I say “simple”, I’m being serious. These chips only take about 30 minutes, and they are such a good treat. Only 4 ingredients – sweet potatoes, coconut oil, rosemary, and sea salt. Just slice the sweet potatoes, and toss them in the other ingredients, bake for 10 minutes on each side and wah-la – you have a great snack!

Paleo Sweet Potato Chips

Ingredients

  • 2 Large Sweet Potatoes
  • 2 Tbsp melted coconut oil
  • 2 tsp dried rosemary
  • 1 tsp sea salt

Directions

  1. Preheat oven to 375F degrees. Peel the sweet potatoes and slice thinly.
  2. In a large bowl toss sweet potato slices with coconut oil, rosemary, and sea salt.
  3. Place the potato chops in a single layer on a rimmed baking sheet covered with parchment paper. Bake for 10 minutes, then flip the chips over and place back in the oven for 10 more minutes. (For the last 5 minutes, watch the chips closely and pul off any chips that begin to brown.)
