I did something brave today… first 10k since being back from vacation – and it was on a treadmill. OMG. It was terrible, I mean my time was ok, but I forgot how much running long distances on a treadmill sucks. Ugh, my hips hurt, knees hurt – it’s going to be a long one. I know, I know, stop complaining Carey – get yourself together!
Let’s talk about this weather though… I’ve been waking up to 50 degree F mornings and no humidity. I’m loving it. Fall is coming – sweaters, boots, apple cider – it’s my favorite time of year! But we’re trying to suck the most out of the nice weather and use the grill as much as possible before the snow comes. Honestly, we’ll be shoveling before we know it.
We made these burgers before we left for our trip, and they were delicious! Paleo, gluten free, dairy free, soy free – these burgers are totally easy to make. All you have to do is mix all the ingredients and grill – could it be more simple? We paired it with my Broccoli Tabouleh – which I posted earlier this week – and it was a mediterranean delight.
So enjoy these brisk mornings and warm fall days and heat up that grill!! Only a few weeks left to do so!
Paleo Mediterranean Turkey Burgers
- 1 1/2lb ground turkey
- 1 medium shallot, minced
- 1/3 cup finely chopped fresh parsley
- 1/4 cup chopped sun-dried tomatoes (in oil)
- 1 tbsp olive oil
- 1 clove garlic, minced
- 1 tsp dried oregano
- 1/2 tsp sea salt
- 1/4 tsp black pepper
Heat a grill to medium. In a large bowl. combine all the ingredients. Mix well. Form into 4 large patties. Grill until cooked through and no longer pink in the middle (about 5-6 minutes per side).
