Paleo Prosciutto Spinach Arugula Pizza

Friday – thank god! I think the past few weeks finally caught up to me, I had 2 drinks last night (my husband and I had one epically stressful week) to wind down and I woke up this morning feeling like I drank a bottle of tequila. Like wtf?! I’m 26 years old, am I getting to old for this? I’m going to blame it on my stressful week, at least this time. I’ll be guzzling down coffee all day at work now, trying to keep my eyes open!

On day’s like this all I crave is pizza. Whenever I get a little drowsy or sluggish my mind goes immediately to the epically tasty thin crust pizza from the shop down the street. Then right after I want to crawl into a hole of depression, because my stomach goes right into bloating mode and I start searching for my stretchy pants.


Well today, I’m going to fight the good fight, and take this urge and turn it paleo and gluten free! In a past blog I’ve posted my recipe for a paleo and gluten free pizza dough, so I’ll be using that and I’ll top it off with some prosciutto, spinach and arugula. The prosciutto makes the pizza a salty taste (which I love), but the arugula and pizza sauce tame it down.

Only 8 hours to go in my day until I can enjoy a delicious slice of this masterpiece 🙂 …but who’s counting?!

Paleo Prosciutto Spinach Arugula Pizza


For the sauce:

  • 6 oz tomato paste
  • ½ cup crushed tomatoes
  • 1 tsp of salt
  • ½ tsp dried basil
  • ½ tsp of garlic powder

For the rest of the pizza:

  • Paleo or gluten free crust
  • Shredded mozzarella cheese
  • Prosciutto
  • Handful of arugula


Preheat your oven to 450 degrees F.

Mix all ingredients for the sauce in a bowl, and let sit for 5 minutes before spreading it on pizza.

On a pizza stone or baking dish, lay out your dough and spread the sauce on it. Then sprinkle the cheese on top to your liking. Bake in the oven for 12-15 minutes, until the cheese browns.

Remove the pizza from the oven, and top with strips of prosciutto, spinach and arugula. Cut into slices and enjoy!
