Pan Fried Cinnamon Bananas

No matter how hard I try, I never get the number of bananas right in the grocery store. I eat at least 2 a day (1 in a smoothie, and then a snack), and my husband is the wild card – I can never figure out how many to get for him. Either way at the end of the week, I either short guessed it, or I have some bananas that are getting really ripe. Most times, I will just stick the really ripe ones (the ones that are balancing on the line of good and bad) in the freezer, that way I always can use them for a smoothie, or experiment with them for recipes. But sometimes, I make this fun snack as a “treat-yo-self” treat!

Let me start out by saying I know this isn’t completely paleo, but its so delicious! I came across a recipe like this on Pinterest, and just had to try and re-create it. You can totally substitute the sugar out for honey to make it paleo – because of that, I’m going to share both recipes and both are gluten free!

Pan Fried Cinnamon Bananas

Easy 5 ingredient sweet treat that your whole family will enjoy for breakfast or a snack- plus you can have them paleo or just gluten free!

Ingredients

For Paleo:

  • 2 slightly overripe bananas
  • 1 tbsp honey
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 2 tbsp coconut oil

For Non-Paleo: 

  • 2 slightly overripe bananas
  • 2 tablespoons sugar (or Splenda)
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • Olive oil spray

Directions

For Paleo:

Combine the honey with ¼ cup of warm water and mix well. Heat the coconut oil in a skillet placed over medium-high heat. Add the banana slices to the skillet and fry for 2 minutes on each side. Remove the skillet from the heat and pour the honey mixture on top. Sprinkle with cinnamon and serve.

For Non-Paleo: 

Slice the bananas, approximately ⅓ inch thick. In a small bowl, combine the sugar, cinnamon, and nutmeg. Set aside. Spray a large skillet with olive oil spray. Warm over medium heat. Add the banana rounds and cook for about 2-3 minutes. During the last minute of cooking on the first side, sprinkle about ½ of the cinnamon mixture over the banana rounds. Flip the rounds, sprinkle with the remaining cinnamon mixture, and cook about 2-3 more minutes, until the bananas are soft and warmed through.
