Kale Blueberry and Carrot Smoothie

Hope everyone had an amazing Halloween! I certainly did. Not only is it one of my all time favorite holidays, but it’s also my first wedding anniversary. Like what the heck year – where did you go? We celebrated over the weekend by going out to a nice dinner and having some drinks, and then last night we just made dinner at home and handed out candy to all the trick or treaters. One thing that made the night epic though was, after our wedding, my mom frozen a huge piece of cake for us to have on our first anniversary. We defrosted it and had about 3lbs of it. It still tasted perfect! Needless to say, this morning at the gym, it wasn’t so perfect…

That’s why I’m sharing one of my favorite breakfast smoothies with you this morning. I’ve been drinking them a lot lately, just to rebalance my system. I started off making this smoothie, because I was craving veggies one morning and didn’t have my normal smoothie ingredients. Despite the color that it turns, the flavor was on point.

Let’s talk about the ingredients… Blueberries, which are simple delicious in smoothies. Plus the fiber in blueberries can help lower blood cholesterol, which leads to heart disease. Kale, which is my all time favorite smoothie ingredient, aids in digestions with it’s fiber content. It’s high in calcium, vitamin C, A, K, Iron, antioxidants … need I say more? Carrots, not what you would normally expect to be in a smoothie, but they blend so smoothly you won’t even know they are there. Plus it improves vision, promotes healthier skin, cleanses the body, and even slows down the aging process.


I also add in some Vega One All-In-One Nutritional Shake, French Vanilla protein. For me I like plant based protein better than whey because it’s easily digestible, healthier, and it tends to have more of a neutral taste (so you can mix it with water, and you don’t feel like choking). I also heard that whey protein is derived from cow’s milk, and is the liquid leftover when milk is turned to cheese. Since I’m lactose intolerant, I don’t need to put extra proteins from dairy into my body. This is a way for me to have a clean alternative. I only put 2 tablespoons in, because I use the vanilla flavor I don’t want it to mask the fruits and veggies.

Kale Blueberry and Carrot Smoothie

Serves 2


  • 3 cups frozen blueberries
  • 2 cups almond milk
  • 1 cup kale
  • 2 large carrots, chopped
  • 1 banana
  • 2 tablespoons vanilla plant protein powder


Place all ingredients in a blender, pulse until smooth. Add more almond milk or water to get the consistency you like. Serve immediately.
