Paleo Mashed Sweet Potatoes

Omg, what a week. Thank god Thanksgiving is around the corner.  Everyone can take their mind off what’s going on in our country, and more about what their going to make for Thanksgiving dinner! Luckily, I can help with that!

I made this recipe for the last two years and it’s been a huge hit! No one has any idea that this recipe is completely paleo and gluten free, and honestly that’s the best part! Especially since some of my family always looks at me crazy when I explain my diet to them. There first instinct is always to say “wait, what do you eat”?

I used to get the “any boyfriends” question while in college, but now that I’m married it moved to “are you eating”.  Not exactly excited for those questions this year, but I guess that’s better than “when are you guys having a baby”!

On a side note, big shout out to my Mom who has completely eliminated grains last week. I’m so proud of her! I remember the first time she heard what I was doing she giggled at me, and said (and I quote) “that’s nice”. Ever since then, she has slowly been eliminating foods, making much healthier choices and working out like a crazy person. You go Mom!

Ok, back to the recipe. Like I said, totally gluten free and paleo, and it’s easy enough to make the morning of Thanksgiving!
