Pumpkin Almond Bites

Just when you think it’s over, surprise pumpkins are still around – well at least for a few more weeks!

I’ve been working on getting more focused again on my diet and exercise and these little puppies have been my savor! Especially since my sweet cravings have been going hard lately. Only a few ingredients, so they are super easy to make!

Kind of like a Lara Bars, the base of these are made with dates and almond butter, which will totally fill you up and keep you full for a while. Plus there’s chocolate chips in there which will give it a sweet twist. Oh and by the way… it’s paleo, gluten free and grain free, so go hand enjoy this wonderful treat!

Pumpkin Almond Bites

Servings = 15 bites 

Ingredients

  • 8 pitted dates
  • 1 cup almond butter
  • 1 cup shredded organic coconut
  • 3 tablespoon organic maple syrup
  • 2 tablespoon flax seed meal
  • 2 tablespoon pumpkin spice
  • 1/2 cup Enjoy Life Chocolate Chips

Directions

In a food processor, pulse together the dates, almond butter, shredded coconut, maple syrup, flaxseed meal and pumpkin spice until completely combined.

Fold in the chocolate chips, then put mixture in the fridge to firm up for about 20 minutes. After 20 minutes, scoop mixture to form bite sized balls. Store in the refrigerator until serving.
