Best-Ever Paleo Waffles

Hope everyone had a wonderful Thanksgiving!

Now that Thanksgiving is over, and I feel like I’ve gained 10 pounds, it’s time to get back in action! Except I was all ready to start getting back into the swing of things today, except my alarm didn’t go off for the gym. I guess fate wasn’t with me today.

I did get to go to the gym over the holiday break, and even ran in a 5k Turkey  Trot on Thanksgiving. Funny thing about that was 2 years ago I finished in 31-minutes. This year, my race time was about 25-minutes. It crazy what hard work over the past couple years can do!

Anyway, we made these waffles last Sunday and they were absolutely amazing!  Instead of normal white flour, I opted for almond flour and tapioca flour, which help keep the texture  of the waffle. Then for more flavor and “fluffy-ness” I used unsweetened applesauce that my in-laws canned for us this fall.

These waffles are completely paleo, gluten-free, sugar free, and whole 30 (if you don’t smother the top of them with syrup)! And the mixture is easy enough that you can add in blueberries, chocolate, or whatever else to make them have even more flavor (and be more fun)!

Best-Ever Paleo Waffles

Servings = 2 Waffles

Ingredients

  • 1 tablespoon melted unsalted butter or avocado oil (for the waffle maker)
  • ½ cup blanched almond flour
  • 1/4 cup tapioca flour
  • 1 teaspoon baking powder
  • pinch of sea salt
  • 2 large eggs
  • ¼ cup unsweetened applesauce
  • ½ teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg

Directions

  1. Preheat a waffle maker and brush it with melted butter. In a mixing bowl, whisk together the almond flour, tapioca flour, baking powder, cinnamon, nutmeg and salt.  Add the eggs, applesauce, and vanilla and mix to combine.
  2. Following the directions for your waffle maker regarding batter quantity and cook time, pour in the batter and cook the waffle until done. Remove and transfer to a low oven to keep warm. Repeat steps to make additional waffles.
  3. Serve the waffles hot with butter and maple syrup.
