Baked Paleo Pork Chops with Apples and Bacon

A few weeks ago, our local supermarket was having a sale on pork chops, so I said why not?! Growing up, my Mom never served pork chops for dinner. Honestly, growing up I didn’t like anything that came from a pig, I saw the movie ‘Babe’ and I just couldn’t imagine him on my plate. Until my husband and I moved in together, I hadn’t had even a piece of bacon for a decade. Since he cooked it literally all the time, my mouth couldn’t help but water, and then I caved. So if my mother did cook pork during my childhood, I clearly don’t remember 🙂

So I’ve never really knew what pork chops tasted like, or how to cook them – but I thought this would be a fun experiment. I didn’t except these to turn out as amazing as they did.

I read a few articles online and it said “the trick to a great pork chop, is letting it sear in a pan before baking them” – and that’s exactly what I did. I first used a meat mallet to flat them a bit (they were pretty thick), and also to get the salt and pepper to stick to it. I let them brown, and then stuck them in the oven with apples, onions, and wait for it….bacon.


It’s a really easy paleo, whole 30, gluten free meal that only takes 30 minutes to make. And with the apples, onions, and bacon,  it makes a whole meal in one – leaving you quite full!

I served this with some roasted garlic kale, but this would be perfect paired with any salad! I hope you enjoy this recipe on a cold night this winter!

Baked Paleo Pork Chops with Apples and Bacon

Servings = 4


  • 4 (4oz) boneless pork chops
  • 3 tablespoons olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tablespoon thyme, chopped
  • 1 medium white onion, peeled and sliced
  • 2 medium apples, cored and sliced
  • 4 slices of bacon, chopped


  1. Preheat your oven to 425F
  2. In a baking dish bake the onions, thyme, apples, bacon, salt and pepper for 20 minutes.
  3. Pound the pork chops out with a meat mallet, and sprinkle with salt and pepper.
  4. In a large skillet, heat 2 tablespoons of the olive oil on medium-high heat. Once the oil is hot, add in the pork chops. Cook each side until browned (about 3 minutes per side). Remove the pork from the pan and remove the skillet from the heat.
  5. Place the pork chops on top of the apples, onions, and bacon mixture (after 20 minutes). Place back in the oven for 10 minutes.
