Pesto Chicken Zoodles with Cherry Tomatoes

Did anyone else eat wayyy to much over the holidays? This girl did, and I’m feeling it lately. It’s crazy how once you get off the wagon your energy levels decrease, blemishes come back, and your pants get a little bit tighter. Well it’s time to get back on the train, and the best way to do that – doing a whole month thats Whole 30!

The first time I did a whole 30 month, was 3 years ago when my husband challenged me to it. Honestly he said to me “I bet you you can’t do it”, boy does he know me – my competitive nature took over and I totally committed to it. It was my first introduction to the paleo and clean eating lifestyle and it completely changed my life (clearly because I’m writing a blog about it).

So I’m starting it off today – I know I should’ve started on Jan. 1 but I didn’t go grocery shopping until today, so it starts now. This meal is always a house hold favorite, and its perfect for a busy weeknight meal only taking less than 30 minutes to make!

img_7473I pan fried 2 chicken breasts in olive oil and then mixed in 3 medium zucchinis that were sprialized, cherry tomatoes, and some homemade pesto. I hope you enjoy this dish as much as we did – let me know what you think!

Pesto Chicken Zoodles with Cherry Tomatoes

Servings = 4

Ingredients

  • 3 zucchinis, sprialized
  • 2 boneless chicken breasts
  • 1-2 cups cherry tomatoes, cut in halves
  • 2 teaspoons olive oil
  • salt and pepper to taste

For the Pesto: 

  • 2 garlic cloves, chopped
  • 2 cups fresh basil leaves, packed
  • ¼ cup pine nuts, lightly toasted
  • ½ cup olive oil
  • 1 tsp freshly squeezed lemon juice
  • salt to taste
