Let’s start by saying I kind of consider myself a waffle connoisseur , I love them. I could honestly eat them every day if they weren’t full of flour, sugar, and everything I don’t want in my diet. Waffles (besides bagels) were the hardest thing to give up. I tried a bunch of different gluten free mixes, but nothing stood up to them. I figured out a great paleo homemade waffle recipe that I posted a while back (which are amazing), but there is something a quick mix that just makes life easier.
I’ve recently been seeing a lot about Simple Mills both in my grocery store, and online. I saw that they had a waffle and pancake mix and bought it immediately. Yesterday I dubbed it ‘Waffle Wednesday’ – I don’t know if thats a thing, but it should be – so I pulled out the Simple Mills. First, there are only 7 ingredients in the mix, 7!!! Like what? There is only almond flour, arrowroot, organic coconut sugar, organic coconut flour, cream of tartar, baking soda and sea salt – and absolutely no preservatives, making it completely paleo! On the label it even said “paleo friendly” – I mean come on how often do you see that?!
You only need to add coconut oil, milk (I used Almond Milk) and eggs then put the mix in your waffle iron, and presto absolute perfection! They are fluffy, savory and one of the best waffles out there. It tastes just like the ones my mom used to make (and that’s saying something). I put two on the plate for my husband – who by now you probably realize is my test dummy – and he licked the plate clean. Honestly, he couldn’t believe that these were paleo, and neither could I!
I also bought one other Simple Mills product, their Farmhouse Cheddar crackers – and they are equally as delicious! If your living the paleo lifestyle, your probably always looking for snack ideas (at least I am), these are like the paleo cheez-its. They are thin, cheesy and salty, and just like the waffle mix there are only a few ingredients! If you get the chance I strongly recommend you trying them!
