Let me start this post by saying this is my favorite time of the year. Not only is my birthday coming up, but March Madness is almost in full swing, and one of my favorite holidays is this week – St. Patrick’s Day. Now you’re probably wondering, why is this one of my favorite holidays? Well it’s simple I’m totally food driven (plus I love Guinness), and although Thanksgiving is the holiday my stomach and heart loves the most, this is a close competitor because of meals.
My family is very Irish, and growing up my mom would always make corn beef and cabbage, which honesty when I was a kid it made my stomach turn. So my Mom would always make me my favorite meal, sheperd’s pie. But clearly this post isn’t about how delicious my Mother’s shepherd’s pie was (sorry Mom), it’s about the bread she also made – Irish soda bread.
In my mind it was a cardinal sin not to have soda bread on St. Patrick’s day, it’s almost as bad as not having a pint of Guinness! When I moved to the paleo lifestyle, I always cheated on this day, because I thought there was no way a gluten free, paleo bread could ever live up to my expectations – but as of this year, I realized how wrong I was…
If you follow my insta, you know that I’m completely obsessed with the whole Simple Mills line, and one of my favorite mixes is the Artisan Almond Flour Bread. It’s simple to make, and the bread is dense. It’s perfect for sandwich bread or toast, and it’s the most like normal bread. I thought if I mixed this with some other ingredients I could make a denser bread that could replicate my dear soda bread.
I made a few different recipes at first, altering the ingredients, measurements, etc – and I finally got it. My husband came home that night, and I told him to try it, and he ate the entire thing – the loaf never made it to the next day.
It’s really easy to make, and only takes about 1.5 hours. This recipe is totally paleo, dairy free, sugar free, and gluten free.
So tonight my kitchen will look honestly like a sweat shop, I’ll be cranking out this recipe for home, work and family all night long. If your looking for some entertainment check out my story on Instagram, I’m sure it will interesting ;).
Irish Soda Bread
Total Time: 1 hour
Paleo, Whole 30, Sugar Free, Dairy Free
- 1 box Simple Mills bread mix
- 2 Tablespoons coconut sugar
- ¼ cup coconut flour
- ¾ cup raisins
- ½ cup almond milk*
- 1 teaspoon lemon juice or white vinegar
- 2 large eggs, lightly beaten
- 1 Tablespoon oil
- In a small bowl, whisk together the almond milk and lemon juice. Let curdle and set aside.
- Preheat the oven to 350 degrees, and lined a baking pan or dish with parchment paper.
- Mix together the dry ingredients (Simple Mill mix, coconut sugar, coconut flour and raisins). Then mix in the eggs and oil, then mix in the almond milk and lemon juice mixture.
- The dough will be sticky, let it sit for 3-4 minutes so the coconut flour will soak some of the liquid up.
- Gather the dough into a ball, and place on the baking dish. Flatten a little, then take a sharp knife and make an shallow x.
- Place in the oven for 40-45 minutes, and use a toothpick to tell if its clean. If it’s clean, broil 2 minutes until the top is golden brown.
- Let cool and enjoy! 🙂
* You can substitute the almond milk for any other milk
