Captain’s Log: Whole 30, week 2, spirits are high, but I’m craving something sweet!!
There’s only so many smoothies you can make, until you get bored of them. I crave chocolate nearly every day (especially) after dinner. I had to find a way to work a “sweet” whole 30 treat in to trick my mind into thinking it’s chocolate – this recipe worked.
I picked up a paleo treat from my local health food store called Emmy’s Organics. I thought they would satisfy my cravings a little but I didn’t expect them to be as delicious as they were! The only problem is, there was only 3 in the bag – like what??! When I got home, I read the ingredients on the back and figured I could make them myself… and oh boy was I right! 🙂
It took me a few tries to get the right mixture, but once I did it was absolutely heavenly (and dare I say better than the package). Only a few ingredients are in there – almond flour, coconut flour, shredded coconut, cacao, maple syrup, and coconut oil. All you have to do is mix them together, mold the mixture into the cookie shape, and then let it harden in the refrigerator. How easy is that?
Because they are completely whole 30, paleo and delicious I wanted to share these with you guys asap – just in case anyone out there is doing whole 30 too or looking to make a healthy dessert/snack substitute.
No-Bake Dark Cacao Coconut Macarons
- 1/2 cup coconut flakes
- 1 tsp coconut flour
- 2 tbsp almond flour
- 2 tbsp coconut oil
- 2 tsp maple syrup
- 1 tbsp cacao powder
Pulse all ingredients in a food processor, until the mixture forms a “dough”. Remove the dough, and with your hands roll it out into balls, and flatten them to make the cookie shape. Set in the refrigerator for 20-30 minutes. Store in an air tight container in a cool place.
