Believe it or not I used to hate salads. I thought they were so boring, and way too plain. But since I really cleaned up my diet, I’ve been experimenting with different salad recipes and this one amazing. I mean if you put bacon in anything it has to be good, right?
By roasting the chickpeas you can give ourself the illusion that there are croutons in this salad, since they are coated in spices and crispy.
I also used the Primal Kitchen Caesar Dressing with Avocado Oil, it’s a lighter dressing with a lot of flavor! Another great thing about this dressing is that you can pronounce every ingredient, I mean how crazy is that?!
A classic dish with a twist, this Roasted Chickpea Bacon Caesar Salad is full of creamy Caesar dressing and crunchy chickpea croutons! A great side or entree for any meal!
Roasted Chickpea Bacon Caesar Salad
Classic Caesar salad with a twist. Paleo, gluten free, grain free and whole 30.
- 1 15-ounce can chickpeas, rinse and drained
- 1 tsp paprika
- 1/2 tsp sea salt
- 1/2 tsp black pepper
- 5-6 strips of bacon (more if you really like bacon 😉 )
- 6cups romaine lettuce, chopped
- 2 cups grape or cherry tomatoes, halved
- Paleo Caesar Dressing (Primal Kitchen)
Preheat the oven to 450 F and line a baking sheet with foil. After draining and rinsing chickpeas, pat dry and add to baking sheet. Sprinkle on the paprika, salt and pepper. Stir chickpeas with a wooden spoon to coat evenly. Place in the oven for 15 minutes.
In a skillet cook the bacon on medium-high heat, until cooked through (aka cook the bacon). Then chop the bacon and set aside.
In a large bowl, add in the chopped romaine lettuce, cherry tomatoes, chickpeas and bacon. Pour the caesar dressing over the salad, and serve. Top with additional chickpeas or parmesan cheese.
